La Vierge (French for “the virgin”) Private Cellar is a specialist in wine made from the heartbreak grape, Pinot Noir. The grapes for La Vierge wines are grown in Hemel en Aarde Ridge, a cool climate area with rich clay-based soils. Vineyard and cellar practices aim for the elegant styles of Burgundy and the wines succeed with finely structured palates – excellent to accompany the creations of Shane Sauvage, the executive chef at the La Vierge Restaurant. Fusion guru Sauvage combines local fresh ingredients to inspire and excite patrons with innovative new culinary twists. The restaurant offers seafood, steaks, perlemoen, game and a superior range of vegetarian fare. The chocolate terrine is a must for chocoholics! Take time to enjoy the spectacular views, play a game of boule on the champagne verandah, browse through the art and savour the flavours. Even the toilets will inspire you!
